Always try and juice the leaves as well as the stalks. The green tops contain potassium which helps to balance the high sodium content of the stalk.
Celery contains a compound called 3-n-butylphthalide which is a powerful anti-inflamatory and natural painkiller, making it very useful for rheumatic and muscular pain.

I add celery to nearly every juice I consume. It contains the perfect balance of sodium and potassium which works like a natural electrolyte for pre and post workouts to help reduce achy muscles and replace lost salts. It also has a very alkalising effect on the system so could be helpful in treating arthritis.

Celery is a good natural source of sodium and potassium and is a great all round detoxifier and cleanser. The reason celery is such a great cleanser is because it contains a nutrient compound called coumarins, which stimulate the lymphatic system and encourage increased circulation of lymphatic fluid. The lymphatic system is responsible for the removal of waste products and is essentially the filtration system for the body (sending waste and toxins to the liver and kidneys for removal). This can have a very positive effect on the skin as stimulating the lymph system to work as efficiently as possible, enhances the rate at which toxins are removed from the skin. The result; healthier, brighter skin. Coumarins are also being shown to enhance the activity of certain white blood cells and also help tone the vascular system. They are also a powerful diuretic which means you need to release urine more. Every time you do this the distribution of fluid in the body is effected and the watery portion of our blood decreases. This of course means the pressure within the blood vessel decreases and so blood pressure decreases.
Celery is very alkalising in the body, which is extremely important as it's in an acidic environment that disease thrives.
Celery also contains silicon which helps to strengthen nerve and heart tissue and is believed to halp calm the nervous system.
Research
A study conducted at King Saud University in Riyadh, Saudi Arabia on the benefits of celery, published its results in the July issue of 'Pharmaceutical Biology.' Researchers studied the results of giving celery extract to animal test subjects with stomach ulcers. The study concluded that celery is able to heal ulcers more quickly and helps protect the stomach from forming new ulcers.
A study held at Harvard Medical School Center for Neurologic Diseases in Boston, Massachusetts, found that drinking juice from, or eating celery has been shown to slow the progression of Alzheimer’s. The study discovered that the neuroprotective properties in celery were potentially useful as a preventive measure and treatment for the disease. The results were published in the June 2010 edition of 'Journal of Neuroscience.'
