Cut the cherries into quarters and remove the stalk and stone. Place the oats and almonds in a large container of a hand blender or Retro Super Blend and blend for 10 – 15 seconds until they form a flour.
NextAdd the banana, honey, cinnamon and filtered water and blend for 10 – 20 seconds until the mixture forms a batter. Then add the cherries and mix.
CookPlace the coconut oil in a frying pan and heat over a medium to high heat, then add a quarter of the mixture to the pan and shape into a pancake and cook for 2 – 3 minutes each side, until golden. Repeat using the rest of the coconut oil and mixture. Depending on the size of your pan, you can probably cook two at a time.
ServeEnjoy these amazing little pancakes, whilst warm and gooey.
*Oats are technically gluten-free but unfortunately some commercial oats have been cross contaminated with wheat, barley or rye, during the harvesting, storage, milling or processing, so be a little careful here if you are particularly sensitive.
