Remove the ends from the onion, peel, cut in half and slice into the slices.
CookDrizzle the olive oil into a pan and place over a medium heat. Add the onions, cover with a lid and cook from 8-10 minutes until soft (stirring occasionally.)
Add the apple juice and raisins and cook (without the lid) over a medium heat for 10 minutes.
Add the balsamic vinegar and continue to cook (with the lid off), for a further 10 minutes until most of the vinegar has evaporated and the mixture thickens.
Turn off the heat and transfer to a little dish.
ServeGreat either warm or cold to accompany most dishes, but works particularly well with a lovely Goats Cheese Salad.
